Science","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"長野県畜産試験場(長野県畜試),千葉県畜産総合研究センター(千葉県畜総研),埼玉県農業技術研究センター(埼玉県農技)で行われた稲発酵粗飼料を給与した肥育試験で生産された胸最長筋を分析に供した。長野県畜試,千葉県畜総研では交雑種牛に稲発酵粗飼料を全期間給与する全期間区,稲発酵粗飼料を肥育の前期と後期に給与し中期は稲わらを給与する前後期区,肥育前期はチモシー乾草を給与し肥育中期以降は稲わらを給与した対照区を設けた。牛肉中のα-トコフェロール含量は,全期間区>前後期区>対照区の順に多くなった。冷蔵庫に貯蔵中におきる肉色の劣化の程度を示すメトミオグロビン割合,脂質の酸化の程度を示すTBARS 値は,長野県畜試で生産された牛肉では対照区に比較して全期間区や前後期区で低い値を示した。千葉県畜総研でも全期間区と前後期区のTBARS 値は抑制された。メトミオグロビン割合は,全期間区が前後期区より有意に低い値を示した。埼玉県農技で褐毛和種を用いて農家で行われた2 回の試験でも肥育全期間に稲発酵粗飼料を給与した試験区は稲発酵粗飼料を給与しなかった対照区よりα-トコフェロール含量が有意に多くなり,試験区ではTBARS 値が抑制された。メトミグロビン割合は,試験区と対照区で差がなかった。\n 胸最長筋の脂肪含量は各試験場で区間に有意差はなかった。牛肉の軟らかさを示す剪断力価は,千葉県畜総研では前後期区が対照区より有意に低い値を示したが,長野県畜試と埼玉県農技の試験では区間に有意な差は認められなかった。長野県畜試では,皮下脂肪と筋間脂肪において全期間区は前後期区及び対照区に比較してパルミチン酸の割合が少なくオレイン酸の割合が多くなり,千葉県畜総研では筋肉内脂肪で前後期区が対照区よりオレイン酸の割合が多くなった。以上より,α-トコフェロールを豊富に含む稲発酵粗飼料を肥育牛に給与することによって,牛肉にα-トコフェロ-ルが蓄積し,肉色の劣化や脂質の酸化が抑制されることが示された。","subitem_description_type":"Abstract"}]},"item_10002_identifier_registration":{"attribute_name":"ID登録","attribute_value_mlt":[{"subitem_identifier_reg_text":"10.24514/00000319","subitem_identifier_reg_type":"JaLC"}]},"item_10002_publisher_8":{"attribute_name":"出版者","attribute_value_mlt":[{"subitem_publisher":"国立研究開発法人
