This study focused on intracellular glutathione levels and on the influence of the environmental stresses on the levels under filter culture condition in Aspergillus oryzae. The profile of the levels showed a peak on the second day after inoculation. Under oxidative stress, the levels did not change. The levels increased under heavy metal stress and decreased under nitrogen source deficient 様々なストレス耐性に関与していることが知られている. 本研究では醸造用麹菌であるAspergillus oryzae RIB40のフィルター培養条件下における細胞内グルタチオン含有量の経時的変化を測定した. 分生子接種後 2―3日で細胞内グルタチオン量が最大となり, 4日目には低下した. また, 最少培地での培養を 2日間行った後, 環境ストレスとして設定した, 酸化ストレス区 (H_2O_2添加培地), 重金属ストレス区 (Cd添加培地), 飢餓ストレス区 (N源欠乏培地) での培養を継続して行った. グルタチオン含有量の変動を調べたところ, 対照区と比較して酸化ストレス区では変化は見られなかったが, 重金属ストレス区では一時的な上昇が見られた. また, 飢餓ストレス区ではグルタチオン含有量は総じて減少していた. このことから, A. oryzae
