In the water-soluble fraction of rice bran, 10 spots for 44kDa and 23kDa dehydrin-like polypeptides were detected on the immunoblotted membrane. Isoelectric points for the polypeptides were estimated to be 6.6-7.4. A 23kDa dehydrin polypeptide was purified, and its cryoprotective activity on freeze/thaw inactivation of lactate dehydrogenase was examined.
